How do you perform the burn treatment for blue iron pans?
These products, when they leave the blacksmith shop, are covered in a thin layer of oil to prevent air and moisture from forming the much-feared rust. However, the oils used as coatings are industrial oils, absolutely inedible, and must therefore be removed.
Part 1: Burning of the blue iron pans
Therefore the first operation to carry out on the newly purchased pan is to pass a paper towel over the entire surface to remove most of the oil layer.
The part that we were unable to remove with the paper, we will remove using the oven.
Bake the pan at 250 C for about 15-20 minutes.
At this stage it is advisable to keep the windows open, as the industrial oil will evaporate and its smell is not very pleasant.
At this point, let the pan cool. When it has returned to room temperature, a minimum quantity of oil is poured (of seeds) on a napkin and grease the entire surface of the pan, both internally and externally. It is important to use little oil: there should be a light film on the pan, not a lake. It is also important that the entire surface is reached and no uncovered areas remain.
Part 2: Burning of the blue iron pans
Once this step has been completed, the pan is baked again at 200 250 °C for another 10-15 minutes .
At the end of this phase, remove the pan from the oven and leave it to cool.
At this point, repeat the same step another time, that is, grease the pan with paper towels (always being careful to use little oil) and put it in the oven for 10 15 minutes at 200 250 C.
After carrying out this treatment, the pans will have a very thin film of oil which will make them non-stick.
When the time comes to use them, you can lightly grease the pan before placing the pizza on it to be safe, but it is not essential: if the searing has been done correctly, the pan will be non-stick.
Part 3: Cleaning and maintenance of blue iron pans
After using it, it should absolutely not be washed with soap and water, otherwise it would open the way to the formation of rust.
It is advisable to remove any solid residues with a plastic spatula and paper.
If the pan is clean it can be put away, perhaps applying a very light coat of oil as protection.
However, if any encrustations remain, these must be removed or scratched vigorously.
In those places the film of oil formed during the burning process could be removed.
In this case it will be necessary to carry out the treatment again: a light coat of oil and off in the oven, as seen previously.
